Step 1. Gather the ingredients.
4 cups of flour
2 T. Salt
1 1/4 t. yeast
2 T. Olive oil
1 1/2 c. water
(i used bread flour) it called for all purpose so I am not sure if this is why mine were not as fluffy as the greek restaurant I like them from)
Step 2. Mix water and yeast in 1/2 cup warm water and mix the salt and rest of water in another bowl. Let it sit 10 minutes until it looks like the picture below.
Step 3: mix the salt water into the yeast mixture. With the flour in a large bowl make a well in the middle.
Step 4: pour yeast mixture into the flour.
Step 5: Knead the dough until it is nice and smooth (10-15 minutes) add 2 T. olive oil and mix it until it is well blended.
Step 6: Place a towel over the bowl and let it rise 1 1/2 to 2 hours. It should double in size.
Step 7: knead the dough for a few minutes and then take egg sized balls of dough and roll them out.
Step 8: Place on a cookie sheet and bake at 350 degrees for 3 minutes on each side.
place cooked pitas in a clean towel until they cool down completely. Then wrap in plastic wrap until ready to use.
Once Ready to use place a little oil in a pan and brown both sides of the pita. Use immediately because it will dry out and get firm.
They taste really good so far.
Tonight I am going to use these to make dinner, so I will post that recipe a little later.
