Recipe #9 Beef Stew

I am making Beef Stew in the crock pot today. It is a very inexpensive meal.

1 lb. of stew beef ( cut pieces into smaller chunks)
2 medium to large potatoes cut into medium chunks
4 medium carrots peeled and cut into chunks (you can use a handful or two of baby carrots)
1 shallot (this is like a mix of garlic and onion) and looks like this.
2 cloves of garlic diced small
2 cans of beef broth (or beef bullion cubes dissolved in water if you have them)
1 can cream of mushroom soup
1 package of onion soup mix

Mix all ingredients into the crock pot and cook on high 5 hours or more ( i put mine on all day)
30 minutes Before serving mix 2 tablespoons cornstarch with some water to dissolve and pour into beef stew to thicken sauce.
Serve with Jiffy cornmeal muffins and a fresh salad.
Total the meal cost around $6.00 and will feed Brad and I and we will have left over stew.
