Recipe # 12

Mango Habanero Salmon and Fresh Herb Shrimp served over garlic rice.
I made this for dinner tonight and it was WONDERFUL.

Salmon
I took one large salmon fillet (enough for Brad and I to share) and cut it into 4 sections. I removed the skin.
I mixed together 1/2 cup F&W mango ginger habanero sauce here
1 Tablespoon Worcestershire sauce
1/4 cup light brown sugar
Mix together and pour over Salmon
Cook at 400 degrees for 20 minutes.
After making that I made the best shrimp I have ever made. I use 12 large shrimp with the tails on.
In a food processor or blender mix 2 table spoons of olive oil, 1 sprig of fresh rosemary, 8 leaves of fresh basil, a few sprigs of cilantro, and parsley. Add 1 clove of garlic, 2 Tablespoons lemon juice salt and pepper. Blend well. Put in a dish and add shrimp. Coat well and let it sit until ready to cook.
To cook place 2 Tablespoons of butter and 2 Tablespoons of olive oil in a pan. When it is really hot add the shrimp and cook 1 to 2 minutes on each side. Turn off the heat and add in the herb sauce to the pan. Mix well.
Cook rice and add a clove or two of garlic. Use the shrimp sauce to coat the rice. It gives it a wonderful flavor.
